Lotus Root: The Cool-Looking Superfood Hiding in the Mud

Lotus root is the crunchy, cool-looking part of the lotus plant that grows underwater—yep, it’s actually the stem, not the root! The lotus itself is that gorgeous pond plant with big pink or white flowers.

You’ll typically find lotus plants growing in muddy ponds or flooded fields, but you’ll also see them in ornamental backyard ponds and even container water gardens. Farmers have a pretty old-school way of harvesting them—using their toes to feel around in the mud and then digging them up by hand! Harvest season runs from August through fall, but you can find lotus root in many Asian grocery stores all year round.

From the outside, the root looks like a plain brown, fat tube. But slice it open and—surprise!—you’ll see a super cool pattern of holes that looks like lace or a snowflake. The texture is crispy, and the taste is mild and slightly sweet. It’s great in soups, stir-fries, braises, or even tempura-fried.

lotus root - harvesting and cooking

When buying lotus root, look for ones that feel firm and have smooth, blemish-free skin. Store them in the fridge, and when you’re ready to cook, just trim the ends, peel the skin, and slice or cube. Quick tip: soak the slices in lemon or vinegar water to keep them from turning brown.

Lotus root isn’t just delicious—it’s seriously good for you too! It’s low in fat and loaded with vitamins B and C, which help boost your immune system and keep your skin glowing by supporting collagen production. Plus, it’s full of fiber to keep things moving, and packed with minerals like potassium (great for blood pressure), phosphorus (helps your body make and repair cells), and copper. Basically, it’s a crunchy little powerhouse that helps keep you feeling strong and healthy!
